Coconut & Banana Oatmeal

This is a really simple twist to an otherwise quite boring breakfast. It’s may seem a little indulgent but really most of the sugars and calories are from the oatmeal and the banana. I only use 1/2 a serving of the coconut. I hope you enjoy it. If you do something special to your oatmeal, please share it in the comments below I’d love to know about it.
Serves: 1
Ingredients:
1/2 cup Old Fashioned Organic Oats (Only ingredient on the box should be natural whole grain rolled oats)
1 cup water
1 medium banana
1 tbs unsweetened, organic shredded (medium) coconut

Preparation:
Microwave: Pour the dry oatmeal in a single serve bowl and pour in the water. Add the shredded coconut and stir it up. Slice the banana and add. Place in microwave and set it for 2 minutes. DO NOT walk away because at about 1:30 the oatmeal may need to be stirred. It has a tendency to boil over if not monitored. Even if it doesn’t I open the door and stir up the bananas. By now they are nice and soft. It may also be done before the 2 minutes are up. Remove from microwave (carefully of course) and enjoy.
I make this in the Microwave but you can certainly do it stove top.
Stove Top: Bring water to boil. Add oats, sliced banana and coconut flakes. Stir and leave to boil for one minute stirring occasionally. Do not walk away. Pour into a single serve bowl and enjoy.

- 1 whole Peach sliced and dash of cinnamon
- 1/2 cup raspberries
- 1/2 cup strawberries
- 1 banana and 2 tbsp flax seed
- 1 apple and cinnamon
- 1/2 a banana and 1/4 cup strawberries
