Garlic & Ginger Infused Turkey with Organic Black Beans on a Wild Rice Blend

I made this last night and it was pretty yummy. It’s my first in my new series of recipes and I hope you find that it’s easy to make, healthy as well as tasty. I think you’ll find that my recipes allow for creativity so go for it! Add some spicy curry or chillies. No need to stick to it if you like to spice things up. Garlic & Ginger Turkey with Organic Black Beans on a Wild Rice Blend

Serves: 3

Ingredients:

12oz Organic Ground Turkey
1 cup Wild Rice Blend
16oz Organic Cooked Black Beans (I use a can)
1 Tablespoon Minced Ginger Root
4 cloves of Garlic
3 stalks of Green Onions
1 Tablespoon of Olive Oil
1/2 tablespoon fresh Tarragon
1/2 tablespoon fresh Rosemary
Pinch of Salt & Pepper to taste

Preparations:

The rice gets on the stove first. For my wild rice blend I placed the cup of rice in with 1 1/2 cups of water and brought it up to boil. Covered it and let it sit for 10 minutes on the lowest heat. While the rice cooked I minced my garlic & ginger, chopped up the green onions and fired up the next burner. I like cooking in a wok, I practically make everything in it. Very handy and versatile. I heated that up on medium heat and then poured in my olive oil.

Just as the oil began to smoke (it’s OK for olive oil) I popped in my garlic and browned them up a little, just a couple of minutes. Right before I put in the turkey I added the ginger to the wok. Next, in goes the ground turkey.  After it has a chance to brown for a couple of minutes break it up and stir it up with the green onions. Lower the heat a little and cover it. I let that sit for a few minutes while I take the rice off the heat and while still covered, reset my timer for another 6-8 minutes.

Then I stand against the counter where I daydream for 2 minutes about a sunny beach and a Mai Tai …… (Replace with your favorite location and drink as desired)

The next few steps are quick and painless. I throw in the cooked black beans on top of my turkey and stir it up. Add it my herbs and spices breaking up the fresh herbs with my fingers right before they hit the wok to let out their flavors. Cover the wok and get my plates out. Once the timer on the rice goes off it’s done!

Scoop the rice onto a plate and add the garlic & ginger turkey on top. I think you’ll find that getting creative with the spices and herbs makes this a very versatile dish. I would say even on a salad it would work. Let me know how you mix it up I always love trying new things!
